Chayote is green, pear-shaped fruit that belongs to gourd family. Even though Chayote is a fruit, people use it as a vegetable. There are so many names of this fruit such as vegetable pear, christophene, cho-cho, mirliton, chouchoute, pipinola, pear squash and choko. Chayote is a Spanish word that comes from “chayohtli”. You can find different varieties of the fruit which range from smooth to extremely ridge and from cream to apple green in color. The white flesh of the fruit is quite crunchy and has mild sweet flavor. There is one soft seed in the middle of Chayote which is usually thrown away. The nutty flavored seed can be consumed along with the fruit. It is consumed all over the world but it is more popular in the United States. It is very nutritious and has many health benefits.

Chayote is used in South and Central American cuisine as a popular ingredient. It can be eaten in both ways: raw and cooked (boiled, baked, steamed, fried, or sautéed). Also, its stem, leaves, root and seed can be eaten. Chayote is cooked just like the Summer Squash and you can even use it in many recipes in place of squash. It can be added in soups, salad, stews, pies, salsa and pickled in escabeche sauce. In any form (raw or cooked), chayote has good amount of amino acids and vitamin C. You can also consume the root’s tuberous part similar to yam. Diuretic and anti-inflammatory properties are contained by leaves and fruit.
