While using crock pot for cooking, the food will not burn although cooked for longer period.

Spicy Slow Cooker Black Bean Soup

Ingredients:

  • 1 pound dry black beans, soaked overnight
  • 1 tsp ground cumin
  • ½ tsp hot pepper sauce
  • 6 cups chicken broth
  • ½ tsp garlic powder
  • 1 Tbsp chili powder
  • 1 tsp cayenne pepper
  • 4 tsp diced jalapeno peppers
  • ¾ tsp ground black pepper

Method of Preparation:

First of all, drain all the water from soaked beans and wash them. In a slow cooker, mix jalapenos, beans, and chicken broth. Then add chili powder, cayenne, pepper, hot pepper sauce, garlic powder & cumin and cook on high for four hours. After that, decrease the heat to Low and cook for 2 hrs or till the dish is ready to eat.

Slow Cooker Cuban-Style Black Beans with Rice

Ingredients:

  • 2 dried bay leaves
  • ½ tsp oregano
  • 1 (28 ounce) can water
  • 1 large bell pepper, chopped
  • 16 ounces dried black beans (rinsed & drained)
  • 1 tsp kosher salt
  • 2 Tbsp olive oil
  • ½ tsp ground cumin
  • 1 large onion, chopped
  • 5 garlic cloves, minced
  • 2 Tbsp red wine vinegar
  • 1 (4 ounce) can chopped green chilies
  • 1 can (28 ounces) diced tomatoes, undrained

Method of Preparation:

In a slow cooker, combine all the above mentioned ingredients and cook on high for 8 hours or till the beans are tender. Finally, serve the cooked beans with cooked rice.

Slow-cooker Black Beans

Ingredients:

  • 2 bacon slices
  • 3 garlic cloves, chopped
  • ½ tsp ground cumin
  • 1/4 tsp ground red pepper
  • 2 cups diced cooked ham
  • 1 (16-oz.) package dried black beans
  • 1/4 tsp coarsely ground black pepper
  • 2 celery ribs, diced (about 1/2 cup)
  • 1 large sweet onion, diced (about 2 cups)
  • 1 (32-oz.) container low-sodium fat-free chicken broth

Method of Preparation:

As per package instructions, wash & sort the beans. Put them in slow cooker and add water. Soak beans for 8 hours and drain as well as rinse them. Then place the beans again in the slow cooker. Now take a big pan and cook bacon on medium-high heat for 4-5 mins or till it becomes crisp. Remove the bacon and put it in the slow cooker by keeping 2 Tbsp drippings in the pan. In this 2 Tbsp drippings, add onion, celery & garlic and sauté over medium-high heat for 7-8 minutes or until tender. Add ham, cumin & ground peppers by reducing the heat to medium and cook for 5 minutes. After that, add ½ cup chicken broth and cook for 2 mins. Add the mixture to the cooker along with remaining chicken broth and 1 cup water. Cover the cooker and cook for 5 hrs on High or 8 hrs on Low.
