Easy Biscotti Recipe with Cake Mix

Biscotti is a wonderful Italian twice baked cake which was originated in the Italian city of Prato. It is a perfect mid morning snack that is made by adding simple ingredients to a cake mix.

is also recognized as cantuccini and it is the only traditional name which is the plural form of biscotto in the Italian language. Biscotti term derived from the Medieval Latin word biscoctus which means “twice-cooked/baked.” The Biscotti cakes are big almond biscuits that are prepared dry and crunchy by cutting the loaf of dough. As Biscotti are twice baked, they were very dehydrated and could be hoarded for long periods of time. Traditionally biscotti is served with a drink as they were very dry but in modern usage they were often served with coffee, including cappuccinos and lattes, or black tea.

Chocolate Nut Biscotti:

  • Devil’s Food Cake Mix
  • 1 cup flour
  • 1 stick margarine, melted
  • 1/2 chopped nuts
  • 2 large eggs
  • Parchment Paper

Method of preparation:

First of all preheat the oven to 350 degrees, line the baking sheet with parchment paper and set aside. Then combine together the flour, cake mix, eggs, melted margarine and nuts using an electric mixer. Blend 3 to 4 minutes and if required scratch down the sides of the mixing bowl. The ingredients should start to form a ball and then take the ball with floured hands and shape it into a long rectangle around 4 inches wide as well as about 1/2 to 3/4 inches thick. After that, put the rectangles on the parchment lined sheet and bake for around 30-35 minutes.

It should be hard to the touch and overtake the toothpick test. When completed, take away from the oven but don’t turn the oven off and allow the biscotti to cool for around 10 minutes. Cut 1 inch slices using a sharp notched knife and cautiously turn the slices on to their sides on the baking sheet. Again keep them into the oven to bake for an extra 10 minutes. After 10 minutes turn the oven off and leave the biscotti in the oven for 40 minutes as this will crisp the biscotti pieces. Cool completely and store in an airtight container.

Almond Chocolate Biscotti:

  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1 package (18-1/4 ounces) chocolate cake mix
  • 1/2 cup miniature semisweet chocolate chips
  • 1/4 cup chocolate syrup
  • 1/2 cup slivered almonds
  • 1/2 teaspoon almond extract
  • 1 package (10 to 12 ounces) vanilla or white chips
  • 2 tablespoons shortening
  • 1 teaspoon Spice Islands, All Natural, No Corn Syrup Added, Pure Vanilla Extract

Method of preparation:

Take a big bowl whisk the cake mix, flour, butter, eggs, chocolate syrup and extracts until well blended. Mix in almonds and semisweet chocolate chips. After that, on ungreased baking sheets divide the dough in half and shape every piece into a 12-in. x 2-in. log. Bake it at 350° for 30-35 minutes or until hard to the touch and cautiously take away to wire racks as well as allow it to cool for 20 minutes.

Transfer to a cutting board and cut ½ inch slices using a sharp notched knife and put the slices on to their sides on the ungreased baking sheet. Bake for 10-15 minutes or until firm and remove to wire racks to cool. Thaw vanilla chips and shortening over low heat in a small heavy saucepan and mix until smooth. Sprinkle over biscotti, let stand until set.

Lemon Cranberry Biscotti:

  • 2 eggs
  • 1 cup flour
  • 1 package white cake mix
  • 1/2 cup chopped nuts
  • 1/2 cup melted butter or margarine
  • 2 tablespoons grated lemon rind
  • 1 teaspoon vanilla extract
  • 3/4 cup dried sweetened cranberries, chopped
  • Melted semi-sweet chocolate chips for dipping

Method of preparation:

First of all preheat the oven to 350 degrees and line 2 baking sheets with parchment paper. Take a big bowl combine cake mix, flour, butter, eggs and vanilla extract. Whisk it with mixer at low speed until well blended and mix in cranberries, nuts as well as lemon rind. After that separate dough in half and shape every half into a 22 x 2-inch log. Then, put the logs on ready baking sheets and bake logs individually. Bake for 30 to 35 minutes and take out from the oven as well as allow it to cool for 15 minutes.

Now, cut ½ inch slices on a diagonal using a sharp notched knife and place slices on baking sheets. Bake the slices for additional 10 minutes and remove to cooling racks to cool completely. Finally dip one end of cooled biscotti in melted chocolate and let the chocolate to set at room temperature before storing biscotti in an airtight container.

    Just the same as a pinch of salt or sugar will enhance a food, so too can cfofee if/when added to chocolate. MOCHA-CHOCOLATE is also very much the vogue, as both flavours compliment whilst neither one being overpowering. The cfofee that you speak of within your seen recipe’s, may or not be used for its liquid? Rather than say plain milk or water, cfofee has been substituted and why not?If you want an intense chocolate flavour, however, then do not add any cfofee. Use ONLY cocoa and a good dark chocolate of no less then 70%.
